COMBINED lemon paste
Paste product designed to correct acidity degree in gelato.
- For a more intense flavour, substitute fresh lemon juice to water (e.g. 50-100 g/l)
- When hot-processed in pasteurizer, we suggest a 65° C “Low-Pasteurisation” cycle
- For better results with cold-processing, we suggest to let the mix rest for 30 minutes (at least)
