Semi finished product in paste, prepared with partially skimmed fresh milk, sugar and stabilizers, which can be used for multiple purposes:
- As a supplement in milk base mixes to give more spreadability and creaminess to gelato, particularly to prepare gelato cakes.
- To substitute partially or totally sweetened concentrated milk both for gelato and pastry.
- As a supplement in mixes for semifreddo, to improve texture of mousse in tub and semifreddi.
