Made of candied fruit (melon, orange, cherries, apricots) in dice, it gives gelato the true flavour of an old Sicilian speciality.
USES

  • For a “Macedonia Siciliana” flavoured gelato add to a white base mix.
  • For Cassata Siciliana, semifreddi and single portions. In both uses, pairing with our powdered Ricotta is recommended.
  • Particularly suitable for fillings of artisan gelato and confectionery specialities.
    suggestions
  • After adding the paste to the base mix, we suggest filtering it in order to use candied fruit as a layered gelato filling.
